Today marks the first day of VeganMoFo, an event celebrating vegan food! I will be participating along with hundreds of other bloggers (see full list here) by blogging about food-related topics at least every week day during the month of October.
To start it all of, I thought I would attempt a new version of one of my all-time favorite dishes: Eggplant Parmesan. It's not the most beautiful-looking dish, but it was good!
The method still needs some tweaking, so I'm not posting the recipe just yet. This was actually the FIRST TIME that I ever tried out our broiler. That was exciting. I left it in just a tad too long and burned bits of the Follow Your Heart.
I've not tried Eggplant Parmesan before but it does look delicious.
